Potatoes- 4, All purpose Flour- 2 Tbsp, skim milk- 1 cup, butter- 1 tsp, salt- to taste

Peel the potatoes and cut them into 1" cubes. Cook them soft (in microwave or boil in water). Add salt, mix well and set aside. In a non-stick sauce pan, add the butter and fry the flour, stirring constantly. Add the milk, potatoes and let it boil until the gravy gets to the right consistency.
Could add fried onions, roasted garlic to the soup
