📝 Ingredients
4 medium fresh beets
1 cup apple cider vinegar (or white vinegar)
1 cup water
½ cup sugar (adjust to taste)
1 teaspoon salt
½ teaspoon black peppercorns
2 cloves garlic, peeled
2 bay leaves
Optional: ½ teaspoon mustard seeds or whole cloves for extra flavor

1. Prepare the Beets:
Wash the beets thoroughly.
Place them in a pot of water and simmer until tender (about 30–40 minutes).
Drain, let cool slightly, then peel and slice into rounds or wedges.
2. Make the Pickling Brine:
In a saucepan, combine vinegar, water, sugar, salt, peppercorns, garlic, and bay leaves.
Bring to a gentle boil, stirring until the sugar and salt dissolve.
3. Pickling:
Pack the sliced beets into sterilized glass jars.
Pour the hot brine over the beets, making sure they are completely covered.
Seal the jars tightly.
4. Resting:
Allow the jars to cool at room temperature.
