  • 3–4 lbs beef chuck roast

  • 2 tbsp olive oil

  • Salt & black pepper to taste

  • 1 large onion, sliced

  • 4 garlic cloves, minced

  • 3–4 carrots, cut into chunks

  • 3–4 potatoes, peeled & cut into pieces

  • 2 cups beef broth

  • 1 cup red wine (or additional broth)

  • 2 tbsp tomato paste

  • 1 tbsp Worcestershire sauce

  • 2 tsp thyme

  • 2 tsp rosemary

  • 2 bay leaves

1. Season and Sear the Beef:

Pat roast dry with paper towels. Generously season with salt and pepper.
In a large Dutch oven, heat olive oil over medium-high heat. Sear roast on all sides until browned — about 4–5 minutes per side. Remove and set aside.
