Ingredients

For the Chicken

  • 2 lbs (900 g) boneless chicken thighs or breasts

  • 1 cup chicken broth

  • ½ cup honey

  • ⅓ cup soy sauce

  • ¼ cup ketchup

  • 4 cloves garlic, minced

  • 1 tbsp rice vinegar (or apple cider vinegar)

  • 1 tsp sesame oil (optional)

  • 1 tsp ground ginger

  • ½ tsp black pepper

  • 2 tbsp cornstarch + 2 tbsp water (slurry)

For the Noodles

  • 8–12 oz spaghetti, rice noodles, or egg noodles

  • 1–2 tbsp butter or sesame oil (optional)

For Garnish

  • Sliced green onions

  • Sesame seeds

  • Red pepper flakes (optional)


Instructions

1. Build the honey garlic sauce

In a bowl, whisk together chicken broth, honey, soy sauce, ketchup, garlic, vinegar, sesame oil, ginger, and pepper.

2. Add everything to the slow cooker

Place chicken in the slow cooker and pour the sauce over it.

3. Cook low and slow

  • LOW: 5–6 hours

  • HIGH: 2½–3 hours

Chicken should be fork-tender.

4. Thicken the sauce

Remove chicken and shred it. Whisk together cornstarch + water. Stir the slurry into the slow cooker and cook for 10–15 minutes until sauce thickens.

5. Cook the noodles

Boil noodles according to package directions, drain, and toss with a little butter or sesame oil.

6. Combine

Return shredded chicken to the thickened sauce. Add noodles and toss until everything is coated and glossy.

7. Serve

Top with green onions, sesame seeds, and red pepper flakes if you like a kick.
